El Occidental works with producer families in Acatlán de Osorio, a mezcal-making town in Puebla's southern highlands that operates outside the more famous circuits of Oaxaca. The brand's focus is on transparency and small-batch production, sourcing agave from specific microclimates and documenting each step of the process. This Tobalá expression showcases one of mezcal's most sought-after varieties: Agave potatorum, a wild-growing species that thrives in rocky, high-altitude terrain and takes between twelve and fifteen years to reach maturity. Because Tobalá plants are small and yield less juice than cultivated varieties like Espadín, bottlings like this one remain limited and command attention from mezcal enthusiasts who prize its distinctly floral, mineral character. The production here follows traditional Puebla methods. Agave piñas are roasted for three days in an earthen pit layered with wood and rocks, which imparts a subtle smokiness without overwhelming the agave's natural flavors. After roasting, the piñas are ground with a mechanical roller mill, then fermented in wooden vats with deep well water and wild yeasts native to the region.
