This Chicago-exclusive bottling from 5 Sentidos brings together two distinct agave varieties in a technique that's rare even within mezcal's vast repertoire. Eduardo "Lalo" Pérez Cortés roasted, fermented, and distilled Tobalá and Madrecuixe together in his copper-pot still in Miahuatlán de Porfirio Díaz, creating what's called an ensamble de cocción — a true field blend where the agaves are cooked side by side from the start, not blended post-distillation. The result is a mezcal that reads as a single voice rather than a conversation between two. Tobalá grows wild in the high-altitude forests of the Sierra Sur, small and intensely aromatic, often described as the most elegant of the cultivated wild agaves. Madrecuixe, by contrast, is a tall, spindly karwinskii with a more vegetal, minerally backbone. When Lalo roasts them together in his earthen pit, the Tobalá's floral sweetness tempers the Madrecuixe's green, peppery bite. Expect stone fruit and wet earth up front, segueing into white pepper, mint, and a finish that lingers with salinity and smoke. It's complex without being shouty, structured enough to sip neat but nuanced enough to hold up next to ceviche, grilled octopus, or anything with charred citrus. 5 Sentidos, the curated label founded by Jason Cox at El Destilado restaurant in Oaxaca City, has built its reputation on transparency and equity.
