Alambique Serrano — Vida Nativa Blend #3 · Tepejilote

$110.00
This is cask-strength Mexican rum from a family that's been farming cane in the Cañada region of Oaxaca since 1917 — and this particular blend pushes the Krassel Peralta brothers' alembic pot-still work into genuinely unusual territory. Where their Krassel Still releases (built by patriarch Max Krassel himself in the 1930s) lean lighter and more agricole in style, the alembic pot-still expressions are the rustic, high-ester counterpart, and Vida Nativa Blend #3 is a showcase for that side of the house. The name comes from tepejilote, Nahuatl for "mountain corn," referring to the palm that grows near the family's cane mill sites at roughly 3,000 feet in Santa María Tlalixtac. The rum starts as 100% organic Java-varietal cane juice, fermented with ambient yeast in open pine tanks before a pass through copper alembic pot stills. From there it gets a two-part aging treatment that's doing a lot of the flavor work: one component spends 33 months in new French oak followed by 13 months in an ex-red-wine Hungarian oak cask, while the second component ages 35 months in a cask that previously held Mexican fortified wine, this one American oak. Bottled at full cask strength — 65.9% ABV, no dilution, no sugar, no coloring — from a run of just 529 bottles. The nose runs rich and bakery-driven: eggnog, oat bran, cinnamon roll, caramelized butter on toast just this side of burnt. The palate is where it gets weird in the best way — silky and oily in texture, opening with nutmeg before shifting into soy sauce, anisette, and red hots. This is a sipping rum for people who like their spirits a little confrontational; a few drops of water will open the spice without flattening it. Pour it neat after dinner, alongside something with char or caramelization — flan, a dark chocolate mole, or a cigar if that's your speed. It's also a fascinating bottle to taste side by side with the Krassel Still expressions if you want to understand the range this family is working across. We've got a limited allocation at Off Premise, imported by PM Spirits, and bottles this small-batch don't sit around.
