Four brothers, one diesel-fired column still their great-grandfather welded together in the 1930s, and a rustic copper alembic pot still working the same organic Java cane — that's the split personality running through everything the Krassel Peralta family makes at Alambique Serrano. This bottling, Vida Nativa Blend #2, named for the Ithomia Leila (a slow-flying, glass-winged butterfly native to the cloud forests around their Cañada-region home), is where that duality gets blended together on purpose. It starts with Java-varietal cane juice, fermented in pine tanks on ambient yeast, then split across both stills and multiple barrel programs. Two Krassel-still lots spend 27 months in new French oak before finishing 18 and 13 months in new Hungarian oak. A pot-still lot does 28 months in French oak with a 13-month Hungarian finish. A fourth pot-still lot ages 42 months in ex-Cognac casks. All four get blended, bottled at cask strength (58.3% ABV), with nothing added — no water, no sugar, no coloring. Only 600 bottles exist. The result reads more like a high-proof agricole-meets-brandy than anything resembling a typical rum shelf. Nose brings orange peel, drinking chocolate, and toasted cacao. On the palate expect orange soda, apple cider, bitter sugar, toasted grape jam, a savory snap of palo de chile, and an odd, welcome thread of cucumber running underneath. This is a sipping rum, neat or with a single ice cube to open it up — pour it after dinner alongside dark chocolate, aged cheese, or a short cigar, and give it time in the glass. Alambique Serrano works out of Santa María Tlalixtac at serious elevation, 2,300 to 3,900 feet, growing 100% organic cane and splitting production between Max Krassel's original column still and rougher copper pot stills for their high-ester expressions. It's a sister project to 5 Sentidos, and PM Spirits brings it into the country in tiny quantities.
