Willett doesn't rush this one, and it doesn't cut it either. Pot Still Reserve at cask strength comes out of the Bardstown warehouses twice a year, timed to the equinoxes, and every bottle carries whatever proof the barrel actually gave up — no water added, no blending to a house number. This particular release lands at a burly 126 proof, built from Willett's wheated mash bill (65% corn, 20% wheat, 15% barley) that goes into the barrel at 115 proof and spends over twelve years developing in the Kentucky heat and cold before anyone touches it again. The wheat softens the entry, so you get a round, creamy opening before the barrel takes over: caramel, dark cherry, char, and baking spice that all read louder and clearer than the standard-proof version. This is what cask strength is supposed to do — it doesn't add flavors, it just refuses to hide any of them. A few drops of water lift the fruit further without knocking down the finish, so don't be afraid to work the glass a little. Drink it neat in a rocks glass on a night when you've got nothing else planned, or pour it after dinner alongside something rich and slightly bitter — dark chocolate, a well-aged cheddar, or a cigar if that's your thing. It's also a serious mixing base for anyone who wants a Manhattan or Old Fashioned with real backbone; the proof holds up against dilution and ice better than almost anything else in that price range.
