Elixir Distillers doesn't own a distillery on Islay, but Port Askaig has become one of the most respected names in independent bottling anyway, and the Cask Strength expression is the reason why. Sourced from an undisclosed Islay distillery (whisky geeks have their theories) and released in small batches capped at 60 casks, this bottling skips chill filtration and added color entirely. Nothing gets stripped out, nothing gets adjusted. The casks are mostly refill ex-bourbon barrels, with a portion of freshly toasted American oak thrown in to add depth without smothering the spirit's character. The result is bottled at full natural strength, currently landing at 59.4% ABV, which sounds aggressive on paper but drinks with more finesse than you'd expect. On the nose, you get bright lemon and lime zest, cracked black pepper, and warm toasted bread, opening up into bitter-orange marmalade, beach-bonfire smoke, and a salty coastal breeze. The palate is where it earns its reputation: powerful, yes, but silky rather than punishing. Fresh citrus and briny minerality lead into charred orange peel, vanilla custard, and baking spice, all wrapped in a thick blanket of peat. The finish is long and warming, trailing off with smoldering embers, toffee sweetness, and one last lick of sea salt. This is a whisky for people who want Islay peat without apology — pour it neat in a Glencairn and let it sit for a few minutes to open up, or add a few drops of water if the cask strength feels like too much heat up front. It holds its own alongside smoked meats, aged cheddar, or dark chocolate with sea salt, and it's a natural after-dinner dram for anyone who considers Ardbeg or Lagavulin a baseline rather than a ceiling. We keep small-batch independent bottlings like this in rotation at Off Premise because they change from release to release, and this one's a standout even by Port Askaig's own high bar.
