Faubert Casimir makes rum the way his grandfather did, in Barradères, a village on Haiti's southern peninsula so remote you're more likely to arrive by boat than car. That isolation matters. The cane varieties he grows—Hatienne and Madame Meuze—have been largely abandoned by commercial growers, deemed too stubborn or too low-yielding. Casimir plants them anyway, without irrigation or chemical intervention, and harvests by hand. The fermentation is what separates this Clairin from nearly everything else in the rum world. Rather than fermenting fresh-pressed juice, Casimir reduces the cane to syrup first, concentrating the sugars before they meet wild yeast. Then he does something beautifully odd: he throws a handful of local plants—herbs and leaves—into the fermentation vats, a technique passed down through generations rather than learned from textbooks. The ferment is slow, sometimes stretching more than a week, which gives those wild microbes and botanical additions time to build extraordinary complexity. Only then does the wash make its way to a small, direct-fire pot still. The spirit comes off at around 54% and goes straight into the bottle—no aging, no filtering, no water added. The result is the most exuberant bottling in the Clairin lineup. Massive tropical ester aromatics hit first—overripe pineapple, banana peel, a whiff of model glue—then fold into bitter herbs, anise, and something mineral and chalky underneath. There's a floral thread woven through the funk, and the finish stretches long and dry, turning vegetal and almost savory. This is not refined sipping in the traditional sense. It's agricultural rum at its most honest and unapologetic. Drink it the way you'd treat a serious mezcal or agricole: neat, with a little water to open it up, or in a Ti' Punch where its herbal backbone can shine. It cuts through rich, fatty dishes—grilled pork, coconut-braised fish, anything with char and spice. This is rum for people who want the whole story, not the polished edit.
