Alambique Serrano — Vida Nativa Single Cask #6 · Zacua
$120.00 · Sold out
Four brothers, one diesel-fired still their great-grandfather welded together in the 1930s, and a single cask that happened to turn out loud enough to name after a bird. That's Vida Nativa Single Cask #6 from Alambique Serrano, the Krassel Peralta family's rum project in Santa María Tlalixtac, up in Oaxaca's Cañada region. The name comes from the Psarocolius montezuma — the oropendola, whose calls carry over the family's high-altitude Java cane fields between 2,300 and 3,900 feet. This particular release runs through the Krassel Still, the same column still Max Krassel built by hand nearly a century ago, with no head or tail cuts taken during distillation — a style that leans lighter and more agricole than the family's high-ester pot-still expressions like Altos Esteres. The cane juice ferments on ambient yeast in open pine tanks before hitting the still, then the spirit spends 28 months in a Mexican rum cask (American oak) and finishes 9 months in jackfruit wood, resting across one of the family's four bodegas at elevation. Bottled at cask strength, 54.8% ABV, with nothing added — no water, no sugar, no coloring. Only 237 bottles exist. The nose is where this one gets strange in the best way: cherry cough drop, pipe tobacco, dental floss, green mango skin, a whisper of mothballs. On the palate it turns earthier — wet clay, more cherry, a dash of Angostura bitterness, finishing long with spiced vanilla. Drink it slow, neat, in a tulip glass, the way you'd approach a high-proof agricole or a funky Jamaican pot-still rum. It's a sipper for people who already know their way around cachaça or clairin — pour it alongside dark chocolate, a cigar, or just on its own after dinner when you want something that keeps revealing itself. Alambique Serrano is the sister project to 5 Sentidos, run today by brothers Isidoro, Rommel, William, and Axel Krassel Peralta, carrying on work their German-Mexican family has done in Oaxaca since 1917. Imported by PM Spirits. We've got a limited allocation at Off Premise, and once it's gone, cask #6 doesn't come back.
Pickup at 1128 W Armitage Ave, Chicago.
